NONNA FIORA’S FRICCO’

This dish embodies the essence of simplicity, a culinary gem hailing from the quaint village, Longastrino, nestled in the Po’ Valley where our family’s roots run deep. Traditionally crafted by our great-grandma Fiora, the iconic lady on the passata and polpa label, this side dish graced our table during the balmy summer months when tomatoes, plucked fresh from the field, took center stage.

Ingredients:
650 g of freshly chopped tomatoes
350 g of Manaresi tomato puree
7 oz of lean, diced smoked bacon

Method:
Begin by crisping up the diced smoked bacon in a pan. Once perfectly cooked, introduce the skinless, chopped fresh tomatoes and the luscious tomato puree. Allow this delightful medley to simmer over a low flame for a minimum of 45 to 50 minutes, stirring regularly. Serve this rustic creation on a plate, savoring it with fresh bread or as an accompaniment to a main course. And don’t forget, any leftovers can be repurposed as a delectable pasta sauce.
